Vegan Date Caramel Sauce

Vegan Date Caramel Sauce is a quick and easy recipe that uses only 5 ingredients. It's made without refined sugar, dairy-free and gluten-free. This healthier option is a perfect alternative to traditional dulce de leche.

Equipment

  • Medium saucepan
  • Blender
  • Spatula

Ingredients
 

  • 2 cups of water
  • 1.5 cups (250g/8.8 oz) dates, about 12 dates
  • 1 cup of unsweetened plant-based milk, coconut, almond, oat, cashews
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • Star anise, to taste (optional)

Instructions

  • Add water into a medium saucepan, add the star anise, if using, and let it boil for 5 to 10 minutes.
  • Remove the saucepan from the fire and add the dates.
    Hydrate the dates in this flavored water until they are soft and the liquid looks like syrup. Leave for about 30 minutes. (This makes it easier for your blender to create a smooth date paste.)
  • Strain the dates, then cut them in half, and with the help of a knife, remove the pits.
  • Add the pitted dates, plant-based milk, sea salt, and vanilla extract to a high-speed blender and blend until smooth and creamy.
  • Transfer the vegan date caramel sauce to a bowl and serve, or refrigerate until ready to serve.
